This soup is excellent. Expecially in the winter or for someone suffering from a cold or the flu.
As you can see in the ingredients below, Mom is really into organic food products which can be quite expensive. Feel free to substitute using non-organic ones.
Ingredients:
4 Boneless, skinless, organic chicken breasts
3 Tbsp. butter
3 Tbsp. expellar pressed Canola oil
1 Medium onion, chopped
1 Whole pod of garlic, roasted or raw
1 Can crushed tomatoes (organic-Muir Glen)
1 Tbsp. dried Mexican oregano
1 Tbsp Cumin
Juice of 1 fresh lime
Salt to taste
Fresh cilantro
Sliced fresh carrots
Organic frozen whole kernel corn
1 Can organic black beans, drained
1/2 cup organic basmatie brown rice
Organic frozen green peas
1 Qt. Pacific organic chicken broth
2-3 raw jalapenos sliced
2 T Chicken Demi-glace
Instructions:
1. Cut chicken into bite-sized pieces and brown them in a large pot in the butter and oil.
2. Add onion and garlic, saute, add tomatoes,
broth, demi-glace cumin, oregano, jalapenos and rice.
3. With lid on,
simmer until chicken is done.
4. Add corn, carrots, green peas. cook until
done.
5. Add black beans, lime juice, cilantro.
6. Cook 5 more minutes and
serve.
7. The jalapenos can be added when serving for those who want spicey
instead of during the cooking time.
